This is Ecuador! Even though there are small round cheese buns in other South American countries, Ecuador simply has the best. They are served fresh from the oven - nice and warm, savory cheesy and the consistency is also really nice and elastic. In Ecuador, people accompany it with a fresh, fruity yogurt drink.

Ingredients
- 500 g yuca/tapioca flour (Asian store)
- 400 g grated mozzarella
- 100 g grated pecorino (or parmesan)
- 1 egg
- 1 tbsp sugar
- 1 tbsp salt
- 2 tbsp butter (soft)
- 1 tsp baking powder
- 200 ml milk (approx.)
- Zipper bags
Steps

Knead all ingredients (except the milk).

Then, step by step, add only enough milk until the mixture forms a malleable dough. The mixture should be easy to roll into balls with a diameter of approx. 2-3 cm.

Distribute the finished balls in zipper bags and then put them in the freezer.

After at least 1 hour, the Pancitos de Yuca should be reasonably frozen. Then you can preheat the oven.

Preheat the oven to 220 °C top/bottom heat and bake the desired number of Pancitos de Yuca on a baking rack with baking foil for 15 minutes. Slightly brownish? Then they are ready.

In Ecuador, Pancitos de Yuca are so popular that there are special shops - similar to an ice cream stand - that only sell Pancitos de Yuca. You can also choose the desired fruit for the refreshing yogurt drink, which is freshly prepared on site. It’s simply incredibly delicious!
